Ingredients
  

  • – 1 1/2 lbs ground turkey
  • – 2 cups peeled diced sweet potatoes
  • – 1/2 cup gluten-free breadcrumbs or almond flour
  • – 1 large egg
  • – 3 garlic cloves minced
  • – 1/4 cup chopped parsley
  • – 1 teaspoon dried basil
  • – 1 teaspoon dried oregano
  • – 1 teaspoon salt
  • – 1/2 teaspoon black pepper
  • – 1/2 teaspoon smoked paprika
  • – 1 24-ounce jar marinara sauce
  • – 1 small onion diced

Equipment

  • Slow cooker, mixing bowl, spatula, skillet

Method
 

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, half the garlic, parsley, basil, oregano, salt, pepper, and paprika.
  2. Shape mixture into meatballs (about 2 inches diameter).
  3. Optional: brown meatballs in a hot skillet with olive oil for 2–3 minutes for extra flavor.
  4. Place meatballs and sweet potatoes in slow cooker. Top with onion, remaining garlic, and marinara sauce.
  5. Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until meatballs are cooked through and potatoes tender.
  6. Garnish with fresh herbs. Serve as is or over gluten-free pasta.

Notes

For paleo, use almond flour. Meatballs freeze well; great for meal prep!
