GF Teriyaki Chicken and Broccoli over Potatoes

Tender gluten-free teriyaki chicken and broccoli cooked in a sweet, sticky sauce served over comforting slow-cooked potatoes. Family-friendly and fuss-free!

Ingredients
  

  • – 1 1/2 lbs boneless skinless chicken breasts or thighs cut into chunks
  • – 3 cups broccoli florets
  • – 1 1/2 lbs Yukon gold or sweet potatoes peeled and cubed
  • – 1/4 cup tamari gluten-free soy sauce
  • – 2 tablespoons honey or maple syrup
  • – 1 tablespoon rice vinegar
  • – 2 tablespoons sesame oil divided
  • – 2 tablespoons arrowroot or cornstarch
  • – 2 teaspoons fresh grated ginger
  • – 3 garlic cloves minced
  • – 1/4 cup water
  • – 1/2 teaspoon black pepper
  • – 1/2 teaspoon salt
  • – 2 tablespoons butter or vegan butter
  • – 2 tablespoons chopped scallions for garnish
  • – Sesame seeds for garnish

Equipment

  • Slow cooker, mixing bowls, spatula, potato masher

Method
 

  1. Place potatoes in bottom of greased slow cooker. Season with salt and add 1 tablespoon butter.
  2. Layer chicken chunks and broccoli florets on top.
  3. In a bowl, whisk together tamari, honey, rice vinegar, 1 tbsp sesame oil, ginger, garlic, water, and pepper.
  4. Pour sauce over chicken and broccoli. Cover and cook on LOW 5–6 hours, until chicken is tender and potatoes soft.
  5. Remove 1/4 cup sauce, whisk with arrowroot. Stir mixture back into slow cooker and cook 10 more minutes to thicken.
  6. Mash potatoes with remaining butter. Serve teriyaki chicken and broccoli over potato mash. Garnish with scallions and sesame seeds.

Notes

Add bell pepper or swap potatoes for cauliflower. Leftovers reheat well for meal prep bowls.
