Ingredients
  

  • – 2 medium sweet potatoes peeled and cubed
  • – 1 onion chopped
  • – 1 red bell pepper chopped
  • – 3 cloves garlic minced
  • – 1 poblano or jalapeño pepper seeded, minced (optional)
  • – 2 tbsp olive oil
  • – 1 15-oz can black beans, rinsed and drained
  • – 1 15-oz can kidney beans, rinsed and drained
  • – 1 28-oz can diced or crushed tomatoes
  • – 1 cup low-sodium vegetable broth or water
  • – 2 tbsp chili powder
  • – 1 tsp ground cumin
  • – 1 tsp smoked paprika
  • – 1/2 tsp dried oregano
  • – Salt and black pepper to taste
  • – 1 cup corn kernels fresh or frozen
  • – Optional toppings: avocado cilantro, lime, shredded cheese

Equipment

  • Large pot or Dutch oven, spatula, knife, slow cooker (optional)

Method
 

  1. In a large pot, heat olive oil over medium. Sauté onion, bell pepper, and garlic 2–3 min.
  2. Add sweet potatoes, both beans, tomatoes, broth, peppers, and all spices. Stir well.
  3. Bring to a boil, then simmer uncovered 25–30 min, until sweet potatoes are tender. Stir in corn for the last 5 minutes.
  4. Adjust seasoning. Serve with favorite toppings.

Notes

Add cooked ground turkey/chicken for extra protein. Blend part of chili for thicker texture.
