Classic Holiday Sweet Potato Casserole with Pecan Topping

Ingredients
  

  • – 3 lbs sweet potatoes peeled and cubed
  • – 1/3 cup unsalted butter melted
  • – 1/3 cup milk or plant milk
  • – 1/2 cup brown sugar
  • – 1/2 tsp cinnamon
  • – 1/4 tsp nutmeg
  • – 1/2 tsp salt
  • – 2 large eggs
  • – 1 tsp vanilla extract
  • Pecan Topping:
  • – 1/3 cup flour GF if needed
  • – 1/3 cup brown sugar
  • – 1 cup pecan halves chopped
  • – 1/4 cup unsalted butter melted

Equipment

  • Large pot, potato masher, mixing bowls, baking dish, spatula

Method
 

  1. Boil sweet potatoes until fork-tender (about 18 minutes). Drain and mash in large bowl.
  2. Add butter, milk, brown sugar, cinnamon, nutmeg, salt, eggs, and vanilla. Blend until smooth.
  3. Spread into greased baking dish.
  4. In separate bowl, combine flour, brown sugar, chopped pecans, and melted butter. Mix into crumbles; sprinkle over potatoes.
  5. Bake at 350°F (177°C) for 30-35 minutes until golden and bubbling.

Notes

Assemble, cover, and refrigerate up to 2 days; bake before serving. Swap pecans for oats or seeds for allergies.
