  • ½ cup dried red lentils optional, for extra protein
  • 3 cups vegetable broth or stock
  • ½ cup dried apricots chopped, or golden raisins
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • ¼ cup fresh cilantro or parsley chopped (plus more for garnish)
  • Cooked couscous quinoa, or rice, for serving
  • Sliced almonds or toasted pine nuts for garnish (optional)
