Ingredients
  

  • – 2 large sweet potatoes peeled and cubed
  • – 1 15-ounce can chickpeas, drained and rinsed
  • – 2 cups broccoli florets
  • – 1 cup sliced red onion
  • – 2 cups baby spinach or arugula
  • – 2 tablespoons olive oil
  • – 1 teaspoon smoked paprika
  • – 1 teaspoon garlic powder
  • – 1/2 teaspoon ground cumin
  • – Salt and pepper to taste
  • – 2 tablespoons tahini for drizzle
  • – 1 tablespoon lemon juice
  • – Optional: pomegranate seeds roasted pumpkin seeds, cooked quinoa or rice

Equipment

  • Baking sheet, mixing bowls, spatula

Method
 

  1. Preheat oven to 425°F (218°C). Toss sweet potatoes, chickpeas, broccoli, and onion with olive oil, spices, salt and pepper.
  2. Spread veggies and chickpeas on baking sheet. Roast for 25–30 minutes, flipping halfway, until crisp and golden.
  3. In a small bowl, whisk tahini and lemon juice (add water if needed for drizzling consistency).
  4. To serve, divide greens & grains between bowls. Spoon roasted veggies and chickpeas on top.
  5. Drizzle with tahini sauce, garnish with pomegranate seeds or nuts if desired.

Notes

Great for meal prep—keep veggies and sauce separate and combine before serving.
