Chef Emma here, and this is one of those “everyone’s happy” dinners I keep on repeat when the week gets busy. You get tender chicken, sweet peas, and a cozy creamy sauce—all in one skillet, and it’s on the table fast.

A fast, family-friendly one-pan dinner with tender chicken and sweet peas in a creamy, savory sauce. Ready in about 30 minutes and perfect over rice, pasta, or mashed potatoes.

Ingredients
  

  • – 1 tablespoon olive oil
  • – 1 lb boneless skinless chicken breast, cut into 3/4-inch cubes
  • – 1 teaspoon kosher salt
  • – 1/4 teaspoon black pepper plus more to taste
  • – 3 tablespoons all-purpose flour
  • – 1 cup chicken broth low-sodium if possible
  • – 2 cups frozen sweet peas
  • – 2 tablespoons sour cream
  • – 1/4 cup chopped chives or sliced green onions
  • – Optional: 1/2 teaspoon garlic powder or 2 cloves fresh garlic minced
  • – Optional: 1 tablespoon butter for extra richness

Equipment

  • – Large skillet (12-inch)
  • – Cutting board and knife
  • – Measuring cups and spoons
  • Wooden spoon or spatula
  • – Small bowl (optional)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken in a single layer. Sprinkle with salt and pepper. Cook 4–7 minutes, stirring once or twice, until browned and mostly cooked through.
  3. Sprinkle flour over the chicken and stir well to coat (this thickens the sauce).
  4. Pour in chicken broth, increase heat to high, and bring to a simmer while stirring and scraping up any browned bits.
  5. Stir in peas and return to a simmer. Cook 2–3 minutes, stirring often, until peas are hot and chicken is cooked through (165°F).
  6. Remove skillet from heat. Stir in sour cream and chives until creamy and smooth.
  7. Taste and adjust salt and pepper. Serve hot.

Notes

– Stir sour cream in off the heat to keep the sauce smooth.
– For a thicker sauce, simmer 1–2 extra minutes before adding sour cream.
– For a thinner sauce, add a splash of broth.
– Storage: Refrigerate leftovers in an airtight container for up to 3 days.
– Reheat gently on low heat, adding a splash of broth if needed.
