  • – 1 1/2 lbs Italian sausage links sweet or spicy, cut into 2-inch pieces
  • – 1 1/2 lbs baby gold or russet potatoes cubed
  • – 1 large onion chopped
  • – 2 tablespoons olive oil
  • – 1 teaspoon Italian seasoning
  • – 1 teaspoon garlic powder
  • – 1/2 teaspoon dried rosemary or thyme
  • – Salt and pepper to taste
  • – 1 bell pepper chopped (optional)
  • – Fresh parsley or Parmesan for garnish

Equipment

  • Sheet pan, mixing bowl, knife, spatula

Method
 

  1. Preheat oven to 400°F (204°C). Line a sheet pan with parchment.
  2. Toss potatoes, onion, bell pepper (if using) with olive oil, Italian seasoning, garlic powder, rosemary, salt, and pepper.
  3. Spread mixture on sheet pan and nestle sausage pieces on top.
  4. Bake 30–35 minutes, stirring halfway, until potatoes are golden and sausage is cooked through.
  5. Garnish with fresh parsley or Parmesan and serve hot.

Notes

Swap chicken sausage for a lighter option. Use sweet potatoes for extra flavor.
