Ingredients
- 8 cups Chex cereal (rice or corn)
- 1 cup semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
- 1/4 cup butter
- 1 teaspoon vanilla extract
- 1 1/2 to 2 cups powdered sugar
Instructions
- Pour the cereal into a large bowl and set aside.
- In a microwave-safe bowl, melt the chocolate chips, peanut butter, and butter together. Microwave in 30-second intervals, stirring between each, until the mixture is smooth.
- Add the vanilla to the chocolate-peanut butter mixture and stir well.
- Pour the mixture over the cereal and gently stir until the cereal is evenly coated.
- Allow the mixture to cool for a few minutes.
- Transfer the coated cereal to a large resealable plastic bag. Add the powdered sugar, seal the bag, and shake until the cereal is well coated.
- Spread the mixture on a baking sheet lined with parchment paper to cool completely.
