Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 large sweet potatoes peeled and cubed
  • 3 tablespoons basil pesto
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: shredded mozzarella cheese fresh basil for garnish

Equipment

  • Baking sheet or large roasting pan, mixing bowl, spatula

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease baking sheet.
  2. In a large bowl, toss sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread evenly on one half of the baking sheet.
  3. Coat chicken breasts with basil pesto and place on other half of the baking sheet.
  4. Roast for 25-30 minutes or until chicken is cooked through and potatoes are tender.
  5. Optional: Sprinkle mozzarella over chicken and potatoes during last 5 minutes and return to oven until melted.
  6. Garnish with fresh basil before serving.

Notes

For added tenderness, marinate chicken in pesto for 30 minutes before baking.
