This recipe puts a fun twist on traditional chili by swapping beans for tender chunks of russet and sweet potatoes. A hearty and wholesome twist on classic chili, featuring tender chunks of russet and sweet potatoes simmered with ground beef in a rich, savory tomato broth.

Ingredients
  

  • 1 tbsp Olive oil
  • 1 lb Ground beef 85% lean
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 medium Sweet potatoes peeled and cubed (1-inch pieces)
  • 2 medium Russet potatoes peeled and cubed (1-inch pieces)
  • 1 can 15 oz Diced tomatoes (fire-roasted preferred)
  • 1 can 15 oz Kidney beans, drained and rinsed
  • 3 cups Beef broth
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • Salt and Black pepper to taste
  • Optional toppings: Sour cream cheddar cheese, chives

Equipment

  • Large Dutch Oven or Soup Pot
  • Chef’s Knife
  • – Cutting board

Method
 

  1. Brown the Beef: Heat the olive oil in a large pot over medium-high heat. Add the ground beef and onion. Cook until the beef is browned and onions are soft, about 5-7 minutes. Drain excess fat if necessary. Add garlic and cook for 1 minute until fragrant.
  2. Add Spices & Veggies: Stir in the chili powder, cumin, paprika, salt, and pepper. Toast the spices for 30 seconds. Add the cubed sweet potatoes and russet potatoes, stirring to coat them in the spiced meat mixture.
  3. Simmer: Pour in the diced tomatoes (with juices), kidney beans, and beef broth. Stir well. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the potatoes are fork-tender.
  4. Finish & Serve: Taste and adjust salt if needed. If you prefer a thicker chili, mash a few potato chunks against the side of the pot. Ladle into bowls and top with your favorite garnishes.

Notes

For a thicker consistency, let the chili simmer uncovered for the last 5-10 minutes.
