Ingredients For Pumpkin Chicken Bake

  • 2 boneless chicken breasts
  • 1 cup pumpkin puree
  • 1/2 cup cream
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried thyme
  • Optional: grated parmesan or breadcrumbs for topping

Instructions for Pumpkin Chicken Bake

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a bowl, mix pumpkin puree, cream, salt, pepper, and thyme.
  3. Sear chicken in a skillet for 2 minutes per side until lightly golden.
  4. Place chicken in the baking dish and pour the pumpkin mixture over it.
  5. Optional: top with grated parmesan or breadcrumbs for extra flavor.
  6. Bake for 25 minutes or until chicken is fully cooked and sauce is bubbly.
  7. Serve warm, garnished with fresh herbs or extra thyme.
