  • 3 lbs Sweet potatoes peeled and chopped into chunks
  • 3 large Apples Granny Smith or Honeycrisp, peeled, cored, and thinly sliced
  • 1/2 cup Brown sugar packed (divided)
  • 1/4 cup Maple syrup
  • 1/2 cup Unsalted butter divided
  • 1 tsp Vanilla extract
  • 1/2 tsp Salt
  • Crumble Topping:
  • 1/2 cup All-purpose flour
  • 1/2 cup Old-fashioned oats
  • 1 tsp Ground cinnamon
  • 1/4 tsp Nutmeg

  • 9×13 inch Casserole Dish

Method
 

  1. Boil Potatoes: Place the sweet potato chunks in a large pot of water. Bring to a boil and cook for 15-20 minutes until fork-tender. Drain well.
  2. Mash Base: Return potatoes to the pot. Add 1/4 cup butter, 1/4 cup brown sugar, maple syrup, vanilla, and salt. Mash until smooth and creamy.
  3. Assemble Layers: Spread the mashed sweet potatoes evenly into a greased 9×13 inch baking dish. Arrange the sliced apples in an even layer on top of the potatoes.
  4. Make Crumble: In a medium bowl, whisk together the flour, oats, remaining 1/4 cup brown sugar, cinnamon, and nutmeg. Melt the remaining 1/4 cup butter and pour it over the dry ingredients. Mix with a fork until crumbly.
  5. Top & Bake: Sprinkle the crumble mixture generously over the apples. Bake at 375°F (190°C) for 35-40 minutes, or until the apples are tender and the topping is golden brown.
  6. Serve: Let cool for 10 minutes before serving to allow the filling to set slightly.

Notes

If the topping browns too quickly, cover loosely with foil for the last 10 minutes of baking.
