Honey Garlic Salmon with Roasted Potatoes

Ingredients
  

  • – 1 1/2 lbs baby gold or red potatoes halved
  • – 1 lb salmon fillet cut into 4 portions
  • – 3 tablespoons olive oil divided
  • – 2 tablespoons honey
  • – 3 garlic cloves minced
  • – 1 tablespoon lemon juice
  • – 1 teaspoon soy sauce or tamari
  • – 1 teaspoon smoked paprika
  • – Salt and black pepper to taste
  • – Optional: 1/2 lb broccoli florets or green beans
  • – Fresh chopped parsley and lemon wedges for serving

Equipment

  • Sheet pan, mixing bowls, spatula

Method
 

  1. Preheat oven to 425°F (218°C). Toss potatoes with 2 tbsp olive oil, salt, pepper, and paprika on a sheet pan. Roast 20 minutes.
  2. Whisk honey, garlic, lemon juice, soy sauce, remaining 1 tbsp olive oil, salt and pepper to make the glaze.
  3. Remove pan, push potatoes to one side. Add salmon (skin side down) and optional veggies. Brush salmon heavily with glaze.
  4. Roast 10–12 minutes until salmon is flaky and potatoes golden.
  5. Garnish with parsley and serve hot with lemon wedges.

Notes

Use maple syrup for variation. Add chili flakes for extra heat. Refrigerate leftovers up to 2 days.
