Easy One-Pot Creamy Garlic Parmesan Chicken and Potatoes

Ingredients
  

  • – 1 1/2 lbs boneless skinless chicken breasts or thighs
  • – 1 1/2 lbs baby Yukon gold potatoes halved or cubed
  • – 3 tbsp butter melted
  • – 1/2 cup chicken broth
  • – 1/2 cup light cream or half-and-half
  • – 1/2 cup freshly grated Parmesan cheese
  • – 4 cloves garlic minced
  • – 1 tsp Italian seasoning
  • – 1/2 tsp paprika
  • – 1/2 tsp salt or to taste
  • – 1/4 tsp black pepper
  • – 2 tbsp chopped fresh parsley for garnish
  • – Optional: 1/2 lb fresh spinach or broccoli florets steamed or sautéed

Equipment

  • Large oven-safe skillet or casserole dish, mixing bowl, spatula

Method
 

  1. Preheat oven to 400°F (204°C). Grease a large oven-safe skillet or casserole dish.
  2. Arrange potatoes evenly on bottom. Season chicken with salt, pepper, Italian seasoning, and paprika. Place on top of potatoes.
  3. In bowl, whisk melted butter, garlic, broth, cream, and Parmesan until smooth.
  4. Pour sauce evenly over chicken and potatoes. (Add spinach/broccoli if using.)
  5. Bake uncovered for 35–40 minutes, until chicken is cooked through and potatoes are tender.
  6. Garnish with parsley before serving.

Notes

Use chicken thighs for more moisture. Add lemon juice before serving for brightness. Refrigerate leftovers up to 3 days.
