Ingredients
  

  • Meatballs:
  • – 1 1/2 lbs ground chicken
  • – 1 egg
  • – 1/3 cup gluten-free breadcrumbs or panko
  • – 2 cloves garlic minced
  • – 1/4 cup red onion grated
  • – 2 tbsp chopped parsley or mint
  • – 1 tbsp lemon zest
  • – 1 tbsp fresh oregano or 1 tsp dried
  • – 2 oz crumbled feta optional
  • – 1 tsp sea salt
  • – 1/2 tsp black pepper
  • Potatoes:
  • – 1 1/2 lbs baby gold potatoes quartered
  • – 2 tbsp olive oil
  • – 2 tbsp lemon juice
  • – 1 tsp dried oregano
  • – 1 tsp garlic powder
  • – Salt and pepper to taste
  • Finish:
  • – Lemon wedges fresh dill or parsley, for serving

Equipment

  • Sheet pan, mixing bowls, spatula, knife, zester

Method
 

  1. Preheat oven to 425°F (218°C). In a bowl, toss potatoes with olive oil, lemon juice, oregano, garlic powder, salt and pepper. Spread on lined sheet pan; roast 20 minutes.
  2. Meanwhile, mix meatball ingredients and form 18–20 balls.
  3. Add meatballs among potatoes on pan. Return to oven for 15–18 min, until meatballs are cooked through and potatoes golden.
  4. Garnish with fresh herbs, lemon juice, and serve.

Notes

Add bell peppers for more veggies. Use turkey for leaner meatballs. Serve with tzatziki or salad.
