Ingredients
  

  • – 4 tilapia fillets 4-6 oz each
  • – 1 1/2 lbs baby gold or red potatoes halved
  • – 3 cups broccoli florets
  • – 3 tbsp olive oil divided
  • – 1 tsp garlic powder
  • – 1 tsp paprika
  • – 1/2 tsp dried thyme or Italian seasoning
  • – Salt and black pepper to taste
  • – 1 lemon sliced
  • – Fresh parsley and lemon wedges for serving

Equipment

  • Large baking sheet, mixing bowls, spatula

Method
 

  1. Preheat oven to 400°F (204°C). Line baking sheet with parchment paper.
  2. Toss potatoes with 2 tbsp olive oil, half the garlic powder, salt, and pepper. Spread on one side of sheet pan. Roast 15 minutes.
  3. Add broccoli to other side of pan, drizzle with remaining oil and seasonings.
  4. Pat tilapia dry, season with paprika, thyme, salt, and pepper. Place among vegetables. Top with lemon slices.
  5. Bake 12-15 minutes until fish flakes easily and vegetables are tender.
  6. Garnish with parsley and serve with lemon wedges.

Notes

Swap tilapia for any white fish. Add cherry tomatoes for color. Store leftovers separately for 2-3 days.
