Ingredients
  

  • – 1 lb large shrimp peeled and deveined
  • – 2 large sweet potatoes cut into fries or wedges
  • – 3 tablespoons olive oil divided
  • – 2 teaspoons Cajun seasoning divided
  • – 1 teaspoon garlic powder
  • – 1/2 teaspoon smoked paprika
  • – 1/4 teaspoon cayenne pepper optional
  • – Salt and pepper to taste
  • – Fresh parsley chopped (for garnish)
  • – Lime wedges to serve

Equipment

  • Large sheet pan, mixing bowls, spatula

Method
 

  1. Preheat oven to 425°F (218°C). Line sheet pan with parchment paper.
  2. In a bowl, toss sweet potato fries with 2 tablespoons olive oil, 1 teaspoon Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Spread in single layer on sheet pan.
  3. Bake fries for 20 minutes, flipping halfway.
  4. Meanwhile, toss shrimp in remaining olive oil, Cajun seasoning, cayenne (if using), salt, and pepper.
  5. After 20 minutes, add shrimp onto sheet pan with fries and roast 6–8 more minutes, until shrimp are pink and fries crispy.
  6. Garnish with fresh parsley and lime wedges. Serve hot.

Notes

For air fryer, cook fries in batches for max crispness. Leftovers make a spicy meal prep bowl.
