🛒 Ingredients: Cheesy Stuffed Bell Peppers

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb (450 g) lean ground beef (or turkey for a lighter version)
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes, drained
  • ½ cup tomato sauce
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded mozzarella (or cheddar)
  • 2 tbsp olive oil
  • Fresh parsley for garnish

👩‍🍳 Directions: Cheesy Stuffed Bell Peppers

  1. Prep the peppers:
    Preheat your oven to 375°F (190°C). Slice off the tops of the peppers, remove seeds, and lightly drizzle the insides with olive oil. Arrange them in a baking dish.
  2. Cook the filling:
    In a skillet, heat 1 tbsp olive oil. Add the onion and garlic, and sauté until fragrant. Add ground beef and cook until browned.
  3. Add flavor:
    Stir in diced tomatoes, tomato sauce, cooked rice, paprika, oregano, salt, and black pepper. Simmer for 5 minutes to combine the flavors.
  4. Stuff and bake:
    Spoon the mixture evenly into each pepper. Top with shredded cheese. Cover with foil and bake for 25 minutes, then uncover and bake 5–7 minutes more until cheese is melted and golden.
  5. Serve:
    Garnish with fresh parsley and enjoy your warm, cheesy stuffed peppers!
