Garlic Butter Steak and Roasted Potatoes

A fast 20-minute garlic butter steak cooked with golden roasted potatoes. High-protein, irresistible, and perfect for weeknight comfort.

Ingredients
  

  • – 1 1/2 lbs sirloin steak cut into 1-inch cubes
  • – 1 1/2 lbs baby gold or red potatoes quartered
  • – 4 tablespoons unsalted butter divided
  • – 2 tablespoons olive oil divided
  • – 5 cloves garlic minced
  • – 1 teaspoon dried thyme or rosemary/oregano
  • – 1/2 teaspoon crushed chili flakes optional
  • – 1 teaspoon kosher salt
  • – 1/2 teaspoon black pepper
  • – 2 tablespoons chopped fresh parsley
  • – Lemon wedges for serving

Equipment

  • Cast iron skillet, spatula, knife, cutting board

Method
 

  1. Preheat oven to 425°F (218°C). Heat skillet over medium-high, add 1 tbsp olive oil and 2 tbsp butter.
  2. Add potatoes, half the garlic, thyme, salt, and pepper. Cook 4 minutes, stir, then roast in oven for 12–15 minutes until golden.
  3. In a bowl, toss steak cubes with remaining olive oil, garlic, salt, pepper, and chili flakes. Sear in batches on skillet for 2–3 minutes, just until browned.
  4. Return cooked potatoes to skillet, add remaining butter, and stir with steak until coated.
  5. Garnish with parsley and serve with lemon wedges.

Notes

Brown potatoes first for crispy texture. Sear steak separate for best flavor.
