This one-pot creamy chicken and broccoli rice is a comforting, protein-packed dinner that’s ready in under 40 minutes. Perfect for busy nights or post-holiday meals, it’s creamy, cheesy, and full of flavor.

Ingredients: One-Pot Creamy Chicken and Broccoli Rice

– 1 lb chicken breast, diced 

– 1 tbsp olive oil or butter 

– 1 cup rice 

– 2 cups broccoli florets 

– 1 1/2 cups chicken broth 

– 1 cup milk or cream 

– 1/2 cup shredded cheddar cheese 

– 1/2 tsp salt 

– 1/4 tsp pepper 

– 1/2 tsp garlic powder 

Instructions: One-Pot Creamy Chicken and Broccoli Rice

1. Heat olive oil in a large pot over medium heat. Add chicken, season with salt, pepper, and garlic powder, and cook until browned. 

2. Stir in rice, chicken broth, and milk. Bring to a simmer, cover, and cook for 15–18 minutes. 

3. Add broccoli and cook for another 5–7 minutes until rice is tender and broccoli is soft. 

4. Stir in cheese until melted and creamy. 

5. Serve warm and garnish with extra cheese or parsley if desired.
